Webinar "Technological and economic problems of beef production in Ukraine"

On December 3, 2025, a webinar “Technological and Economic Problems of Beef Production in Ukraine” was held jointly organized by the Scientific and Methodological Center for Higher and Professional Pre-Higher Education and the Dean of the Faculty of Animal Husbandry and Aquatic Bioresources of the NUBiP of Ukraine Ruslan Kononenko. The need to hold the webinar arose due to the need to find solutions for the sustainable development of beef production as a component of effective animal husbandry and an element of food security.

Two issues were considered during the webinar: “Technological and Economic Problems of Beef Production in Ukraine” – speaker Dmytro Nosevych, Associate Professor of the Department of Animal Husbandry Technologies and “Assessment of Quality Characteristics of Cattle Carcasses in Accordance with World Standards” – speaker Olga Kruk, Senior Lecturer of the Department of Animal Husbandry Technologies.

In the first report, Dmytro Nosevych highlighted the statistics of changes in beef production in Ukraine and analyzed their causes. The report also revealed the problems of raising young animals for slaughter in dairy and specialized meat cattle breeding. Special emphasis was placed on a number of factors that hinder the development of cattle breeding. Additionally, the problems of cattle and beef trade were highlighted, as well as changes that come into effect in connection with the European integration process.







In a report on the problems of assessing the quality characteristics of cattle carcasses, Olga Kruk examined the requirements for beef classification according to DSTU 4673-2006 and the EUROP system, which should replace it and complies with the provisions of EU Regulation 1308/2013 and the “Requirements for the classification of cattle, pig and sheep carcasses” approved by Order No. 4296 of 12.12.2024 of the Ministry of Agrarian Policy and Food of Ukraine. The report also considered the beef assessment systems Korea: carcass (South Korea); JMGA: carcass (Japan); USDA: carcass (USA) and MSA: cut (Australia). Olga Kruk shared her own experience in applying different beef classification systems, as well as the existence of connections between meat assessments and its physical, technological and consumer characteristics.

At the end of the reports, a lively discussion arose about the opportunities and prospects of beef production in Ukraine. The webinar was lively and interesting, attended by more than 60 listeners, and during the discussion, a decision was made to continue such meetings in the near future.
